Apricot & Pine Nut Pilaf
1/2 cup pine nuts
1/2 cup butter
2 cups long grain rice
3 1/2 cups chicken broth
1 cup dried apricots, chopped.
Brown pine nuts in butter. Remove. Add rice and saute 1 - 2 minutes. Add broth and bring to a boil. Cover and simmer for 20 minutes. Add apricots and nuts and cook for 10 more minutes. Fluff with a fork just before serving.
